Cheese & Roasted Vegetable Baked Manicotti

Cheese, cheese, and more cheese! Beyond that however, the roasted vegetables help to create a nice balance for people who might find cheese-filled pasta dishes a little bit too rich. It provides that little bit of something else to what might have been an otherwise ordinary manicotti, adding more flavour and substance to the dish.

Lemon Gremolata Pizza with Cauliflower Crust

A unique creative cauliflower crust makes up the perfect base for this rendition of gremolata-inspired pizza (a combination of parsley, garlic and lemon), completed with thin, zesty lemon slices on the top.

Zucchini Parmesan Sandwich

The zucchini is first breaded and baked to crispy perfection, before layering them with cheese, marinara and fresh basil. These crowd-pleasing sandwiches are great vegetarian alternatives to the Italian and could be prepared ahead of time, heated just before serving.
